What a week this will be! We had a fairly quiet weekend with the teenager out of the house and off to the Youth for Christ retreat. The youngest had much quality time with daddy and mom. That is good for her. We watched movies, read books, played a game, worked on her friendship bracelet kit, and went to church. Yesterday of course was a day off from work/school due to the holiday ( Dr. Martin Luther King, Jr. day) so I did laundry that the teen dragged home, got some bills paid, closets cleaned out and organized and realized this a.m. that I hadn't yet planned the week's menu. This made for a longer than usual grocery shopping trip after work this a.m. It's a strange week because the teen only has her mid-term exams all week. She has one at 8 a.m. each day and can catch a 10:15 bus home. So, we are making her go to bed a bit earlier than normal due to these mid-terms. Our goal is to have dinner by 6 each nite except tonite of course due to Claire's ballet class.
But..I think I am all set:
  • Tues: homemade chicken noodle soup and pumpkin bread (eating late due to ballet class; Dave has leadership meeting at church with all leaders/Pastor)and...it's American Idol night at our house! (except the 9 yr old only gets to watch the first 1/2 hr!)
  • Wed: Turkey Chili over Oven-Baked Steak Fries, Tossed Salad, Tropical Fruit Cup (Courtney has her life::group mtg)
  • Thurs: Parmesan Chicken, Sweet Potato Casserole, Steamed Broccoli, Melon (Dave has life::groups to lead)
  • Fri: unsure....something with a london broil steak I have in freezer
  • Sat: depends on what we do that day. Possible ideas: soup and grilled cheese, or Hot Chicken Bunwiches, Pasta Salad, Steamed Corn, Chocolate Mint Pie
Perhaps I will try one of the 3 recipes I just received in an email recipe exchange. There is a chicken dish that sounds yummy and easy.
I must confess....I HATE cooking in winter as it is way too cold to stand outside and use my grill. And I am just tired of cooking every nite....does any one else feel this way???
I would have my oldest do it but the homework load is just too much on top of her regular chores and church activities not to mention she needs some leisure time! Ah well.....this season shall pass....think spring!!

Homemade chicken noodle soup is my fave. When my mom made it, I ate it 3 times a day till it was gone!

YES! I have felt the same way, tired of cooking every night and then tired of cleaning up after I cooked too.
It is great when someone else can cook because eating someone elses cooking can be refreshing to the cook that cooks all the time!
As the kids get older this will happen more. I can vouch for that! Now that it's mostly my husband and I, I have found that I only have to "cook" occasionally and the rest of the time we do frozen pizzas, sandwiches, eat out much more than we used to. So cooking is not such a demanding chore now, but is beginning to be something to look forward to. Hang in there, it only gets better with time.

Hi Connie Marie: thanks for the words of encouragement! We used to go out ALOT when it was just the 2 of us and we were "newlyweds" (we were married 3 years before the kids came along and we spaced them 5 years apart so we still went out a bit with our oldest) Once we had 2 though we have really cut back on dining out. Part of me does admit that once they are out of the nest, we will be going out a whole lot more! :)

Erin: Yeah, I must confess we often just pick up that phone and order from NYPizza or the Indian place! (and my kids sure don't seem to mind if I walk in the door with kraft mac and cheese!) I can't wait to start grilling again!!
