Coconut Chip Coffee Cake for Christmas!


Every year I've either made brownies or cake for the "Happy Birthday Jesus" dessert on Christmas Day. I especially was faithful to this when the girls were much younger. Last year I didn't make a cake or brownies....and that tradition was missed.

This year, since my mom has passed, we are gathering for desserts at my youngest sister's home to the north of us here in the Albany area.  She lives about 45 minutes north and so I am bringing a coffee cake that can be heated up per slice per person in her microwave.  I baked the cake this morning and it's making the house smell soooo good! 
I'd thought I'd share the recipe. I've made this once before for a small group gathering years ago. It is super simple to make and I got the recipe from Taste of Home.  I'm giving you my version which is a low-fat version but tastes just as good!

COCONUT-CHIP COFFEE CAKE

2 c. Heart Smart Bisquick 
(low-fat/heart healthy kind)
1/4 c. sugar, divided
1 egg
3/4 c. skim milk
3 Tbl margarine, melted and divided
1/3 c. dark chocolate chips, melted
1/3 c. flaked coconut
1/4 c. chopped walnuts




  • In a large bowl, combine the biscuit mix and sugar.  Whisk the egg, milk and 2 tablespoons of the margarine; stir into the dry ingredients mixing only til moistened.
  • Pour into a greased (use canola oil spray) 8x8 inch baking dish.
  • Pour melted chocolate over the batter and draw a knife through to swirl it in.
  • Combine walnuts, coconut and margarine and sprinkle over the top.
  • Bake at 400 degrees for 25 minutes.
  • Cool and then cut into squares when serving.
Tastes great with Christmas Blend, Kona, or Peppermint Creme Coffee!
