Roasted Kale

I tried roasted kale for the first time this week.

Oh.My.Goodness.  I have found a new snack that is super healthy for my body.

I wanted to share the recipe with you.  I actually got it from the food network website but a friend of mine from church also told me how to roast it. She left off the spices though.  I LOVE this new snack.  Please note that even though this blog has a copyright, you do have permission to copy this recipe.

This recipe makes enough for 2-4 people. I used a half bag and saved the other half for later this week.


ROASTED KALE

1/2 bag of kale, cut off the rib/stems if not already chopped
(the bag I bought was chopped kale so I didn't have to do much cutting)
olive oil
garlic powder
grated parmesan cheese
salt (optional)




  • Lightly spray a cookie sheet with cooking spray. I used the olive oil kind.
  • Place the half bag of kale into a large bowl and drizzle with olive oil.  I used about 2 tablespoons of it.
  • Sprinkle a bit of salt over the top and mix well.  I skipped the salt and used garlic powder. 
  • Spread out the kale on a cookie sheet and place in the oven set for 250 degrees.  Roast for about 20 minutes.
  • Sprinkle grated parmesan cheese over the top and enjoy!!!
I served this as a side with Sloppy Joes and pasta salad.

It is also good just as a quick snack. 

The health benefits are amazing!  It helps lower your bad cholesterol and helps to prevent heart disease.

It is from the brassica family so has all the antioxident benefits as well. (along with broccoli, cauliflower, and cabbage).

It is a rich source of Vitamin K, Vitamin A, beta carotene, Vitamin C, and calcium.  

NOTE:  raw kale has MORE of the health benefits than cooked kale.

Roasted kale is a much better choice than reaching for a bag of chips!
