I have had a lot of apples so far this month for eating, using in dinner recipes and for baking.
This morning is an overcast, partly sunny, cooler early autumn Friday so I searched the Yummly app on my iPad for a new Apple cookie. I found one called Apple Spice Cookies and it is delicious. I tweaked it to meet our desires. Please feel free to copy it. They came out delish!!
APPLE SPICE COOKIES
1 c. mini-dark chocolate chips
1/2 c. shortening
1 1/3 c. brown sugar
1 egg
1/4 c. unsweetened almond milk
(or milk of your choice)
2 1/4 c. white whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1 c. chopped unpeeled apple
(I used Cortland)
- Preheat oven to 375.
- In a large mixing bowl, combine the shortening and brown sugar and mix well with a hand mixer.
- Beat in the egg and milk. Mix well.
- Add in the flour and spices. Mix well!
- Stir in the apples and chocolate chips.
- Drop by spoonful onto a slightly greased (I use coconut oil spray) cookie sheet.
- Bake for 8-10 minutes.
NOTE: the original recipe called for whole milk, raisins instead of the mini chips, and chopped walnuts.
Serve with a steaming mug of cinnamon coffee or hot apple cider.

To answer your questions regarding my post...no, I wish I had the talent to sketch like that but I edit my photographs on line. I like the way they look though. I live in Nahant, which is a tiny little sort-of island about 20 minutes from Wonderland. I think you can almost see Nahant from the back side of the Wonderland parking garage.
