Who doesn't love a quick, easy recipe for dinner?
One evening last week, I remembered we had a package of bison. I buy the kind pictured above. I also remembered that I had a recipe for a quick comfort food stew that my younger sister Hope had given me years ago! I always have some canned veggies on hand "just in case" although I do prefer cooking with and eating fresh or frozen. But sometimes I need a fast prep dinner and this recipe is perfect for those times.
QUICK COOK STEW
Please note that the original recipe calls for ground beef and no garlic
I use bison and fresh garlic
1 package of ground bison
2 cloves of garlic, chopped
1 can sliced potatoes
1 can sliced carrots
1 can low sodium green beans or peas
(I sometimes use both)
1 package of Onion soup mix
1/4 c. flour
- In a large, deep skillet, sprinkle about a tablespoon of sea salt and place ground bison on top. Brown the bison until about half done and then add in chopped garlic. Cook on medium heat until bison is totally browned. Meanwhile, in a small bowl, mix together the onion soup and the flour. Stir well. Pour on top of bison.
- Add in 3 c. of the canned veggies LIQUID.
- Bring to a boil while stirring.
- Then add in the veggies and heat through.
I serve this in a deep bowl and add French bread to the menu.
We also usually have either fruit salad or we have fresh red grapes on the side.
This entire meal takes about 20 min to prepare.

please note: If I want to make this and our vegan daughter is home from college, I simply will not use the bison but will add sweet potatoes to the veggie mix, a can of low sodium black beans, and serve over cous-cous or jasmine rice.
