Ham Muffinwiches

I discovered a new recipe that is super easy to prep for a quick dinner.

We always have deli ham on hand because my oldest daughter loves it for sandwiches and wraps.  I only buy the antibiotic and hormone free kind that doesn't have nitrates.  Yes, it's a little more money but it's worth it!  We like the oven baked vs the honey.

If you don't have cheddar cheese on hand, you can use gouda for this recipe...it comes out great!

HAM MUFFINWICHES

1 egg, lightly beaten
1/3 c. unsweetened almond milk
 (or whatever milk you use)
1 Tbsp canola oil
1/8 tsp ground mustard
1 pkg (8.5 oz) cornbread muffin mix
1 c. chopped fully cooked ham
2 scallions (green onions), thinly sliced
2 Tbsp shredded cheddar cheese
(or gouda or whatever your preference)

  • Preheat oven to 400 degrees
  • Whisk together the first 4 ingredients.
  • Add the muffin mix and stir until just moistened.
  • Fold in the ham and scallions.
  • Fill 8 greased muffin cups half full.
  • Bake until knife inserted comes out clean, between 15-20 min.  Mine were done in 17 minutes in a preheated oven.
  • Immediately sprinkle with cheese and let sit for about 4 minutes.
  • Serve warm!
NOTE:  this recipe feeds a family of 4 with 2 muffins each.  We noticed that they were a little crumbly so we used a fork. You will need to double the recipe for larger families.

MENU IDEA

I wanted a spring type meal as we are tired of winter!  So I made these Ham Muffinwiches and made a Pineapple Coleslaw for the side. 
I also served Beets and Steamed Mixed Veggies (green beans, corn, carrots).  For dessert, we had Melon Balls.

You can also try steamed Spinach or steamed Broccoli for your sides with a Fruit Cocktail for Dessert.

For our vegan daughter I plan on replacing the ham with chopped cooked broccoli, sweet red peppers and the scallions.  She'll get vegan cheddar cheese for the top.

These look delicious, Faith! Add a bowl of soup and it would be a perfect supper for us. Hope all is well with you. I was out of town for a bit, so just getting caught up with blogging friends, and finally got a post up yesterday.
