We are a family who loves brownies. And I have over 10 different brownie recipes.
I've never shared this one though. It's a take on the classic recipe by the same name. I've made it a tad bit more healthful and they were a hit! I even gave a couple to my friend Ingrid who dropped in yesterday for a drinks date (socially distanced of course, in the backyard sun!)

CHIPPY BLONDE BROWNIES
6 TBLs of Earth Balance butter (original), softened
1 c. brown sugar
2 TBLs of ground flaxseed mixed with 6 TBLs of warm water
(let sit for 5 minutes or until like egg consistency)
1 tsp vanilla extract
1 1/4 c. whole wheat white flour
1 tsp baking powder
dash of salt
half package (12 oz pkg) of organic dark chocolate chips 65% cacoa
1/2 c. chopped walnuts (optional)
- In a large mixing bowl, cream the butter and sugar.
- Add in the "eggs" (flaxseed) and mix well.
- Add in the vanilla and stir well.
- Add in the flour, baking powder and dash of salt; mix thoroughly.
- Stir in the chocolate chips and walnuts (if using).
- Spread into a lightly greased (I like the coconut oil spray kind) 11x9 inch baking dish.
- Bake at 350 degrees for 25-30 minutes. It usually takes about 27 min for mine (I have a gas oven).
- Insert a knife or toothpick and if it comes out clean, the brownies are done!
- Cool completely before cutting and serving.

They look yummy and I keep telling myself I should do more baking but with only Hubby and me in the house and staying home I know who would end up eating everything! lol I'm trying to make sure I at least stay the same weight during these times.
It was so nice to be able to visit with you. These brownies are amazing! I'm learning to love a lot of vegan recipes, this one is my favourite noms recipe so far.
