Ok so I thought I had this recipe previously posted on here but I guess not.... I can't find it anyways....
So.....my sister in law Kathy wanted this super easy slow cooker peach cobbler recipe....it's the perfect fit for a hot summer evening, especially if you have an abundance of fresh peaches in the house. I had bought several on sale earlier this week and they tend to get ripe very fast. This recipe is great because you don't need the oven on to make the house even hotter than it is!
SLOW COOKER PEACH COBBLER
4-6 large peaches, sliced (peeled is optional)
2 Tbl light brown sugar
1 Tbl lemon juice
1 Tbl Vanilla extract
TOPPING
1 c. whole wheat white flour
3/4 c. brown sugar
1 1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
dash of sea salt
1 c quick cooking old fashioned oats
6 Tbl earth balance butter
(or dairy butter)
- Spray a slow cooker with PAM canola oil spray
- Put sliced peaches into a medium sized baking bowl and add the brown sugar, lemon juice, and vanilla. Toss gently and place in bottom of slow cooker, spreading out the peaches evenly.
- Whisk together the Topping ingredients except for the butter. Pour over the peaches.
- Cut in the 6 pats of butter (6 Tablespoons) and place across the top of the oat mixture.
- Cover the slow cooker and cook on low for 3-4 hours. (mine took 3.5 hours for the peaches to get tender).
- Stir at least once while it's cooking.
- Serve in small bowls.
- Refrigerate the leftovers and use within 2 days.
