I totally forgot to post this yesterday!
I'm trying to stick with a menu plan for the work week or busy weekends as then I stick to a grocery budget.
Here's our weekly plan (I'm flexible.....sometimes I decide to have Weds meal on Thurs, etc. I rarely cook on Friday evenings....we either go out, order take out or Dave helps me make our homemade veggie pizza. I refuse to cook after teaching outside the home all day...this week I'm going to try to stick to the actual plan!)
- MONDAY: Baked lemon-pepper pork chop (for Dave) and Lemon-pepper Chicken breast for me; sauteed zucchini with sweet onion and chopped tomato with a drizzle of olive oil and parmesan cheese; sweet potatoes.
- TUESDAY: Tomato-Basil Orzo Soup and fresh Basil/Tomato/Hummus on Naan Rounds; Ginger Cookies for dessert
- WEDNESDAY: Vegan "fish" tacos with brown rice/quinoa; salsa and blue corn tortilla chips
- THURSDAY: Vegan "meatball" stew (meatballs, potatoes, carrots, celery, green beans, radishes) and Dinner rolls
- FRIDAY: homemade Pizza (Veggie style: mozzarella cheese, basil, yellow/red/green peppers and thinly sliced red onion); salad of Lettuce/cucumbers/tomato
- SATURDAY: Grilled Chicken and Broccoli Stir Fry (fresh broccoli, carrots, onions, peas. Oat milk Ice cream for dessert. (choc. peanut butter) OR if our friends can come over we are having Homemade Chili with Bison and Honey Cornbread with S'mores over the fire for dessert.
Sunday?? NO idea yet!!

Now I'm craving chili and cornbread! I'm so fickle with a weekly menu plan. I just can't seem to make it stick.
