Tuesday, Dave and I had to go back to work from our Christmas/New Years break.
Dave informed me he wants needs to lose weight and so wants to begin by cutting out certain carbs and refined sugars. I'm good with that because I have already cut out using refined sugar in almost all recipes. For my coffee, I either drink it black, or use unsweetened almond milk and a splash of honey or pure maple syrup. He is now drinking his morning coffee black. Anyways, we looked at some of our fave recipes and decided to try tweaking them to make them more healthful and plant-based. Here's our menu plan for this back to work week:
- MONDAY: vegan stuffing (basically like regular stuffing but made with bread that doesn't contain milk and veggie broth vs poultry broth); steamed sweet potatoes, steamed green beans, baked chicken tenders (vegan "chik'n"). Yes, Claire came to dinner after work and before the fitness class she teaches.
- TUESDAY: Chili Mac and Cheese with Bison; Tossed Salad
- WEDNESDAY: Chicken-Veggie Curry over Brown Rice
- THURSDAY: Fish and "Chips" (baked french fries) with Cucumber Salad (vegan "fish" for Faith and Haddock for Dave)
- FRIDAY: Tuna Fish Sandwiches and sliced fresh tomatoes
- SATURDAY: Slow-cooker Sloppy Joes with vegan beef (beyond beef); Tossed Salad;Steamed Broccoli
- SUNDAY: out for Indian Food

I don't cook 2 days of the week: Friday we usually do takeout or very occasionally go out to eat. Saturday is either eat from what we find in the fridge or else we have tuna sandwiches. I'm not a great menu planner and usually fly by the seat of my pants. I might have some idea of what I would like to make that week but nothing written in stone.
Hey Susanne: yes on Fri nights that we have small group I eitherm ake something like sandwiches and raw veggie platter OR we get take out. All other Friday nights we order out or go out. Saturday is my fave day to cook if i'm not hiking because I can put together a slow cooker meal and enjoy the day! I don't stick to the menu plan the way i write it...i just jot down the basic ideas of what I want us eating that week. i find that having a basic plan means i'm sticking to a budget better at the grocery store. Ex: tonight's feel that's listed here in the post was actually last night's meal ! hahahha
