I saw this online and had save it. I tend to eat breakfast about 6: 45, an hour after waking up, doing my stretches/yoga, having my morning devotions, and first mug of coffee. Dave fasts from 7 pm-11 am as he is trying an intermittent/low sugar diet. My lunch break from teaching is at 1:15. I get 30 minutes for my break. Dave tends to eat lunch between 11:30-1 pm...sometime in that range. We eat dinner almost every evening between 6:15- 7 pm. We discovered this when we first went to Europe in 2010. We loved it. Our daughters also eat later. On nights we have our small group study, we tend to eat about 5:45 pm but it tends to be something light.
I've been doing a lot of homemade meals these last 5 weeks and we did go out to dinner two Friday nights in January. That was fun and yummy. Here's what's cooking this week:
MONDAY: Shepherd's Pie with Beyond Beef (vegan) and Steamed Broccoli on the side
TUESDAY: Vegan "Fish" Tacos with Coleslaw; Cucumber Salad
WEDNESDAY: Italian Bean Soup and Garlic Bread
THURSDAY: Baked Chicken Parmesan for Dave (Vegan Chicken for me); Creamy Risotto with Chopped Spinach
FRIDAY: Pick up Veggie Subs from local sub shop due to small group study
SATURDAY: Homemade Veggie Pizza; Tossed Salad
SUNDAY: Valentine's Dinner with our daughters who will join us after church. Not sure yet what I'm cooking. Dessert is Chocolate Shortbread Heart Cookies.

We haven't had Shepard's Pie in forever. My youngest used to love it but I don't think to make it anymore. I think I'll make one this week!
