Back to Work Dinner Plan

 




When the girls were little, invariably one, or both, would ask me "mommy, what's for dinner?" I usually had some kind of plan but I know they loved the times when we would say "we're going out" and of course, with the pandemic year, we ordered via door dash or grub hub a lot and that was so convenient. 

Now that Dave and I are empty nesters, we don't order out quite as often and we save going out for "date nights' or when we get together with friends. I cook almost every night of the work week and we follow a mostly plant-based diet. Usually on Fridays we either order out, do something super easy like a veggie omelette or soup and sandwiches or we go out.  Once I'm retired, I plan on trying even more plant-based or vegan meals and I know I will love having the time and energy to really cook. 

Our weekly menu plan for this back to work week:

SUNDAY: Chicken patty grilled sandwiches, 3-Bean salad, steamed beets

MONDAY: Our youngest daughter, the vegan, is coming for dinner so I'll be making Vegan Chik'n sliders and sauteed potatoes, carrots, onions, and broccoli. 

TUESDAY:  Bison tacos with left over 3-bean salad and tortilla chips/guacamole made with fresh avocado.


THURSDAY: Blackened Salmon with Panzanella Salad; steamed French Green Beans

FRIDAY:   Chicken Bunwiches and Tortilla Chips/Salsa; Oat Milk Ice Cream Sundaes for dessert night. 

That wraps up my plans.  

Saturday we might go kayaking if it's nice in the afternoon so we will be going out to dinner afterwards.

Hi Faith. Your ideas look really good. We still have leftovers from today, so we will probably eat that Monday or Tuesday. Wednesday night we are getting a pizza. Who knows what the rest of the week brings. I am not a very good meal planner because I often don't feel like fixing or eating what is on the menu so I do something else anyway. Of course, when the kids were all home, I cooked every night. Not so much now. I hope you have a good week back at work.

I love blackened salmon! One of my favorite easy meals. I had a hair appt this week right after work and threw together a crockpot chicken meal that I made up and my Hubby loved it. I'll have to post the recipe sometime.
