Last weekend I neglected to write up a dinner plan for the work week and wow....it was noticeable because I found I was running to three different food markets after work, trying to decide at the last minute.....6 pm....what to cook that evening, and it was just a hectic week with various appointments, issues at work, phone calls to return, texts to answer...you know...the busyness of life after working all day. We didn't eat badly but I definitely went way off budget. This weekend I sat and drew up some loose plans and this has helped me with the grocery shopping earlier today that I did after church.
How do you decide what to cook for you and your spouse/family? I tend to think "plant based" lately and then take it from there. I also keep fave recipes here on the blog or in a recipe box that sits on one of my kitchen counters. I also use the yummly app often. Here's the plan for the week. The only days that might actually change is Wednesday and Thursday.
- SUNDAY: Cheesy Potato Casserole; Steamed Broccoli; Oatmeal vegan cookies
- MONDAY: BBQ Steak strips (vegan "steak"); Mashed Sweet potatoes; steamed mixed veggies; Cantaloupe and blueberries.
- TUESDAY: Stir Fry Chicken and Veggies over Pesto Cous Cous
- WEDNESDAY: Asian Bowls: tofu, brown rice, broccoli, cauliflower, peas, carrots, orange sauce, cashews
- THURSDAY: Homemade Veggie Pizza (chopped broccoli, red, orange, green peppers, sweet onion, garlic, olive oil, basil, oregano) and Raw Veggie (baby carrots, cucumbers, zucchini) Platter with Peppercorn Ranch Dressing Dip.
- FRIDAY: Out to a local restaurant with our friend Diane OR Grilled Salmon; Fully Loaded Tossed Salad; Garlic bread; make your own sundaes with oat milk ice cream and all the fixings. (she gets to choose!)
- SATURDAY: Whatever is not chosen for Friday!

I'm a mood cooker. I've tried to do menu plans but always end up falling off the wagon cause when the day gets here I don't feel like eating whatever it is that is on the plan for that day. Or the meal on the plan requires more effort and energy than I've got available for that day.
Oh my gosh, did you tell mom about this? She'll love the meal plan (especially that cheesy casserole!!)
