One of my college friends from years ago when we were both piano majors invited me to an "eat the rainbow" challenge. She's into healthful eating like I am so I thought it would be fun to join her challenge. It begins Monday the 11th so I decided to post my menu today so that I can share it with others who want to add more fruit and veggies to their meals. This plan is just my weekly dinner menu plan. For breakfast this week, I plan on eating my steel cut oats with 2 different kinds of berries or a tofu scramble with veggies or avocado on toast and fresh fruit.
- MONDAY: Grilled Impossible (Vegan) Burgers (a beef one for Dave...Claire's coming to dinner so we eat mainly vegan items when she's here) with lettuce, arugula, tomatoes, pickles; Steamed Green Beans; Melon cup (watermelon and cantaloupe
- TUESDAY: Cucumber Slaw; Pumpkin Muffins (Homemade with pure pumpkin puree); Berries (blackberries, raspberries, blueberries)
- WEDNESDAY: Roasted Sweet Potatoes; Grilled Salmon with lemon and dill; Broccoli Parmesan
- THURSDAY: Summer-y Salad with popcorn chicken; Corn on the Cob
- FRIDAY: Veggie Tacos with Brown Jasmine Rice; Salsa and Blue Corn Tortilla Chips; Oat milk Chocolate ice cream for dessert
- SATURDAY: Italian Potato Bowls; Melon Cup
