My husband and I are back from a wonderful Adirondack Mountains getaway for most of last week. We ate so many good dishes while gone.....totally splurged on some faves. Went to this awesome brewery. Now that we're back into our normal routine, I sat down this afternoon to plan out our dinner menu for the week. Our youngest daughter is coming over tomorrow for dinner so I made one of her fave meals. I'm focusing on root vegetables this week and the last of the fresh summer produce.
- MONDAY: Baked Italian Herbed Chicken; Sweet Potatoes; Salad
- TUESDAY: Slow Cooker Sloppy Joes with Impossible Beef; Squash Risotto (I'm using the recipe from A Spirit of Simplicity blog)
- WEDNESDAY: Popcorn Chicken in Jasmine Rice Bowl (broccoli, carrots, onions, black beans, avocado, brown jasmine rice and a drizzle of honey mustard dressing)
- THURSDAY: Udon Veggie Soup; Garlic Breadsticks
- FRIDAY: Fish Sandwiches with homemade Tartar; Salad with fresh local apples
- SATURDAY: Either Dinner out at this place to use up a gift certificate we have or Autumn Apple Chicken over Orzo; Steamed Green Beans/Carrots
