Weekly Menu

 

I have found a need some kind of a diinner menu outline/plan for the upcoming week because, although I am now retired and have more time to cook and tweak recipes, I'm finding I'm spending more at the grocery stores than if I don't have a plan.  For the most part I do stick to the plan although sometimes I switch around the days.   This will be my last Wednesday where we have to eat early (before 6) because it's the last week for my small group here in my house until September! On a typical day, we tend to eat dinner between 6:15-6:45 pm. 


  • TUESDAY: Maple Chicken with Roasted Veggies (baby carrots, zucchini, onion, red potatoes); raspberries/bluberries on the side

  • WEDNESDAY: Fish Tacos (haddock for Dave and vegan "fish" for me) with Asian Salad

  • THURSDAY:  Linguine and Meatballs (vegan "beef" meatballs) with Tossed Salad


  • SATURDAY: Veggie Pizza or Bison Burgers with Baked Beans, leftover Salad


The maple chicken is one I found via Hello Fresh when we used to subscribe to that.  It's a nice dish for spring.......maple is in season of course, here in NYS and we have plenty of locally  grown maple syrup.

I love that you still cook so well. I find it hard to get motivated to cook meals for the two of us. Especially when my hubby won't eat much because he is trying to lose weight (a perpetual thing around here).

Monica: My husband has lost about 28 lbs from doing the Intermittent Fasting (he doesn't eat past 8 pm and goes until about 11/11:30 AM). Now that I'm retired from teaching, I love to cook! hahaha I've had to learn how to adjust without the girls being here though. It's sometimes challenging to just cook for 2. I also freeze leftovers or we have them for lunch.

Your menu looks full of tempting meals. My adult son gets those Hello Fresh (or other) food boxes and brings them to my house and we have 3 dinners together for three nights in a row that he cooks. Those meals are fabulous!

Hi. I'm new to your blog and wanted to say hello. Would it be ok if I came over to your house for dinner? I have to say everything sounds so delicious! I love salmon and fish tacos and the rice bowls sound wonderful and easy. I love to cook and bake and I spend a lot of time in the kitchen as it's my happy place!
