Here is my menu for the week. I like the flexibility I can have with this. I might switch around the side dishes or have Day 3 on Day 2. If raining I might cancel the grilling items and just do something different altogether or re-arrange the recipe to be done on my indoor grill or in a skillet. At any rate, this is a much less busier week than last week so I expect to get some baking done as well. My children are begging for my oatmeal-chip-nut cookies! Which means I will have to add even more power-walking miles as I do enjoy those sweets, too! :)
Day 1: Linguine with Pesto Sauce, Fully-Loaded Salad, Steamed Peas (leftovers!), chocolate-cinnamon pudding
Day 2: Grilled Salmon with Lemon/Pepper Marinade, Lemon/Chive Rice, Squash/Pepper Saute, Raw Veggie Stix (for girls), Watermelon
Day 3: Hawaiian Chicken Kabobs, Parmesan Orzo, Spinach Salad, Cocoa Cookies
Day 4: Pizza Burgers, Multigrain SunChips, Baked Beans, Fresh Fruit Salad, Cukes with Italian Drizzle
Day 5: Slow-cooked Chicken Stew, Steamed Pea Pods, Fruit salad (leftovers); after church musical= "make your own sundaes" with frozen low-fat ice cream or frozen yogurt
Day 6: Pesto PorkChops, Potato Salad, Steamed Green Beans, Corn on Cob with Chive Butter, 3-Fruit Pie
Day 7: FATHER'S DAY at PJ's BBQ! followed by mini-golf and ice cream!
