Menu of the Week/July 16

Well, this week will be a bit different. My husband and oldest daughter are in central PA serving on a missions team. So that leaves just leaves my dancer girl and me here most of the week. Yesterday we ate a late lunch/early dinner on our way back from Cooperstown where we spent the day at The Farmers Museum. We discovered an excellent little ice cream stand that served the best burgers we have ever had. It was in a little town between Cooperstown and Albany called Sharon. A most beautiful little area with rolling hills and lush green grass.
Now we are back in suburbia and I am wondering what to make for dinner the rest of the week. I asked Claire what she wanted to do after her art class today and she just wants to play here in the backyard and ride her bike while I catch up on housework and some organizing tasks. She asked me if I could take her to Denny's! We don't usually eat at many "chain" restaurants but since Tuesdays are kids eat free days I think that will solve tonite's dinner dilemma. So....here is my plan.

  • Day 1: completed!
  • Day 2: "kids eat free" nite at Denny's!
  • Day 3: grilled chicken breasts with balsamic dressing, Cheesy pasta, steamed green beans, Tossed salad
  • Day 4: Slow-Cooked Chicken Stew for 2, Bacon/Cheese Muffins, Sliced Tomatoes and Cucumbers with Balsamic Vinagrette drizzled on top and sprinkled with fresh parmesan
  • Day 5: French Dip Sandwiches, Raw Veggie Platter, Corn on the Cob
  • Day 6: depends on what is planned for saturday but most likely it will be something on the grill: chicken with potato salad?
  • Day 7: see day 6 but grill some pork chops and make Courtney's favorite dishes as a welcome home treat
Wed. a.m. thoughts: will use tomorrow's menu plan for today if still raining by 10 a.m.
