Easy Apple Crisp

A few friends and co-workers have asked me for my apple crisp recipe so I decided since I don't have time to email each person, to just put it here on the blog.  Since I have a "Desserts" section anyways, this will be perfect for an autumn dessert!  

The recipe is actually called Apple Topper and I first learned of it from my youngest sister, Jill.

APPLE CRISP

6-7 medium Cortland apples
(or apples of your choice)
Pam Canola Oil Spray
1 c. whole wheat white flour
(or just regular white flour)
1/2 c.-1 c. sugar
(I use Domino Light or brown sugar)
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg (optional)
1 egg
1 stick margarine, melted

  • Lightly spray an 8x8 inch baking pan and fill 3/4 full of peeled, sliced apples
  • In a medium size bowl, place all the ingredient except for the melted margarine
  • Using a fork, mix until crumbly.
  • Pour over the top of apples.
  • Pour the melted margarine over the entire top
  • Bake in a 350 degree oven for about 25-30 minutes.
  • Serve warm.
TIPS:  To warm leftover apple crisp, simply place in a microwave safe bowl and heat for about 25 seconds.

For an extra touch, add low-fat vanilla ice cream or light cool whip to the top...yummy!

If having friends over, place apple crisp in decorative bowls with autumnal colors or leaf prints. Add autumnal cloth napkins and serve icy cold apple cider in medium sized mason jars with a leaf patterned ribbon wrapped around the jar. You can find leaf patterned ribbon at most arts and crafts stores.  ENJOY

Apple crisp is one of my all time favorite desserts! We don't get Cortland apples around here.

Apple crisp is so delicious and easy to fix. I've never heard of Cortland apples; must be because I'm in the South.
