It's mid-winter when fresh produce isn't all that great here in the Northeast.
So...I stock up on frozen veggies and root vegetables and found this total comfort food recipe via Simple and Delicious. It's so good...I tweaked it from the original which called for ground beef and ground turkey. I used ground bison. It was a huge hit with my husband and oldest daughter.
TATER TOT CASSEROLE
1 lb ground bison
(or you can use beef)

1 pkg (16 oz) frozen mixed veggies, thawed and drained
3/4 c. French fried onions
1 can reduced sodium/reduced fat cream of potato soup
(original recipe calls for cream of celery)
1 can reduced sodium/fat free cream of chicken soup
1/2 c. unsweetened almond milk
(or dairy milk)

4 c. frozen Tater Tots, thawed
( I used about 3/4 of the bag)
- In a large skillet, brown the bison until no longer pink.
- In a 13x9 inch baking dish, lightly spray olive oil or coconut oil and place the bison into the pan.
- Add in the veggies and french fried onions over the top of the meat.
- In a small bowl, mix together the soups and milk and spread over the veggies/onions.
- Top with the tater tots and bake uncovered in a 350 degree oven for 1 hour.
Serve with a side of honeydew melon, cut into chunks, or fruit cocktail.

I love tater tot casserole, but haven't made it for quite a while. Perhaps I will get the ingredients and make it again soon. Thanks for the inspiration! Stay warm on this cold and snowy day! We are expecting up to 8 inches here in Utah. Have a good one!
