We love pizza at my house.
Sadly, the town we live in just doesn't have a good pizza place! Seriously. We have about 8 gourmet burger joints, a new amazing crepe place, St*rbucks and DD ad nauseum and all kinds of tacky fast food chains. But a decent pizza place, other than one nice restaurant, that delivers, seems to be non-existant. So...about 2 years ago, we started creating our own pizzas made from frozen dough we buy at a local bakery or the deli section in the local grocery store. This one featured here, as our oldest daughter says "shouldn't taste good....the concept is weird...yet, weirdly, it tastes fantastic!!" This is a vegan dish if you replace the regular mozzarella cheese with vegan shredded cheese.

THAI PEANUT NAAN PIZZAS
1/4 c. creamy peanut butter
3 Tablespoons Asian ginger dressing
1 Tbl water
1 tsp low sodium soy sauce
2 naan flatbreads
(we use the personal size so for our family of 4, we need 4)
1 c. shredded mozzarella cheese
1 small sweet red pepper, julienned
1 carrot, peeled and julienned
1/2 c. chopped basil
(original recipe calls for cilantro)
1 small green pepper or green onion, chopped into pieces
( I tend to use both)
- preheat oven to 425.
- For the sauce, mix together the first 4 ingredients until blended well.
- Place naan on a lightly sprayed baking sheet; spread with the sauce.
- Top with cheese and veggies.
- Bake until cheese is melted and crust is golden brown. It takes about 8-10 minutes. Sprinkle top with fresh basil or dried basil. (or cilantro if you aren't like me and don't taste soap when you eat it!). Drizzle with chili sauce (optional)

The Thai Peanut Naan Pizza goes well with a side of fresh cut cucumbers and chopped tomatoes or a fruit cup of honeydew, cantaloupe, and blackberries.
