Vegan Peanut Butter Bars

Sometimes I just crave something hot, chocolaty and homemade!  I tweaked an old brownie recipe with healthier ingredients to make it vegan for our ballerina daughter  who is a total vegan and for me who no longer eats dairy.

Fresh outta the oven!



VEGAN PEANUT BUTTER BARS

1/4 c. of Earth Balance Original stick, softened
(vegan butter)
 if you're using cow's milk butter you will need a 1/2 c.)
1/2 c. raw sugar 
1/2 c. dark brown sugar
1/2 c. creamy peanut butter
(or substitute almond butter)
1 Tablespoon ground flaxseed meal
3 Tablespoons water
(this is to replace 1 egg)
1 tsp organic vanilla extract
1 c. whole wheat white flour
(or you can use regular white)
1/2 c. quick cooking oats
1 tsp baking soda
dash of sea salt
1 c. organic dark cacoa chocolate chips
(make sure they say vegan or are at least 60% dark chocolate)



  • Before baking, take the 1 tablespoon of ground flaxseed meal and put in small bowl.  Add in the 3 tablespoons of water.  Stir. Let sit until gelled which will take about 8 minutes.
  • Place the first 4 ingredients in a large mixing bowl and stir thoroughly.
  • Add in the flour, oats, baking soda and sea salt. Mix well.
  • Add in the "egg" (gelled flaxseed).  Stir well.  Mixture will be a bit crumbly.
  • Spray a 13x9 inch baking dish with cooking spray. We like to use coconut oil spray but canola is fine.
  • Press the brownie mixture into the pan and top with the chocolate chips.
  • Bake in a 350 degree oven for 20-25 minutes.  Mine usually take 22 minutes.  DO NOT OVERBAKE!!
Serve warm and ENJOY!
