Easy, Nutritious Pumpkin Squares

It's that time of year when my family loves baked goods with apples or pumpkins.

This recipe is so easy to throw together after work.  In fact, I came home and whipped it together so my family could have dessert tonight and also have some to serve for the members of my book group.

This recipe isn't overly sweet because it uses more natural ingredients and not refined sugar.


EASY PUMPKIN SQUARES

1 c. whole wheat white flour

1 tsp cinnamon

1/2 tsp  ground ginger

1 tsp baking powder

1/2 tsp baking soda

dash of sea salt

)2 "eggs" (2 tablespoons of ground flaxseed with 6 tablespoons of water)

OR 2 regular eggs

1 can pure pumpkin

1/4 c. pure maple syrup

1 tsp vanilla extract


  • Preheat oven to 350 degrees
  • In a large bowl, add all the dry ingredients and mix well..
  • Add in the rest of the ingredients minus the cocao chips and mix well.
  • Mix until a thick batter forms and then add in the cocao chips.
  • Stir until blended in and then pour into a lightly greased (I use coconut oil spray) 8x8 baking pan.
  • Bake for 20-25 minutes or until inserted knife comes out clean.
Serve warm!

For leftover squares, simply heat in microwave for 10-15 seconds.

 NOTE:  if replacing real eggs with the healthier choice of flaxseed follow these steps:
place 2 tablespoons of ground flaxseed into a small bowl and add 6 tablespoons of cold water.  Stir and let sit for 5-8 minutes or until like the consistency of an egg.  add to ingredients

Hmmm, yum. I haven't baked in such a long while but I can just smell all those lovely fall scents in this!
