Here it is Friday again. It was rather a long week of cold, grey weather. We did see the sun a bit but for the most part it was bitter cold for the first time this school year. We only have a small amount of snow but we have a LOT of ice. Yesterday was milder though and we actually reached 40 degrees! Today is colder and this weekend is supposed to be frigid with a possible Nor'easter!
I'm taking time before work and then a dinner at church for small group leaders, to reflect on the blessings of the week and share FIVE of my FAVE ones. I do this with other bloggers and then we link our posts up at Susanne's site. How about joining in?

- HOMEMADE PESTO! I bought Claire (our youngest girl who is pure vegan and lives at home with us now that she's a college grad) a plant protein cookbook for Christmas. She found a homemade pesto recipe and asked if I would make it. (she had to work the day she wanted it...conveniently :) ) I was thrilled because I've always wanted to make homemade pesto and was told it's a lot of work. Nope. Not that hard at all if you have a good blender. I followed the directions after making sure we had all the ingredients and it was absolutely the BEST pesto. It just doesn't compare to the store bought greasy stuff. My goodness....over whole grain linguine and a tossed salad on the side it was a perfect winter dinner. I'm thankful for clean, real ingredients and good food!

- IN HOME DATE NIGHT: Last Friday evening we ordered dinner from a local restaurant we have known about for years but have never tried. We wanted a veggie pizza (Dave and I). Claire was at work and was going to make herself something when she got home. Well, Dave suggested this series on Netflix as he really loved the book when he was a young teen. I had only ever read the first 2 chapters when I was young. I just never could get into this book! Well, the series is delightful..at least episode 1 is. We may watch another episode this weekend. It's so well done, I was pleasantly surprised. It was a fun evening together under a cozy blanket eating yummy food and enjoying this classic. And we finally found a decent pizza place in our town!! I'm thankful for fun in-home date nights....especially in the winter.
- TWO HOUR DELAY! I'm always thankful when I get the text via the Remind app that we are on a 2 hour delay....especially on mornings when we have had freezing rain like on Monday morning! It actually began early Sunday morning so I watched church live online at 9 am. Then it warmed up enough to just be rain. And then the deep freeze settled in again over night and Monday morning was ICY. By 9:30 when I had to leave for work, the main roads were clear and I'm thankful for good road crews, our executive director and the bus companies deciding to delay school, and for a safe car that defrosts quickly.

- BODY SCRUB! I absolutely love vegan, cruelty-free beauty products and this company does not disappoint. My current fave is their new Cherry Blossom and Tea Rose. I have the body mist, hand cream, and body scrub. The body scrub is amazing in the shower......goes on thick and creamy and easy to rinse.....the scent is absolutely heavenly and my skin feels so moisturized with no icky ingredients. I'm thankful for good quality skincare.

- ACTS OF SERVICE: Claire's primary love language is Acts of Service (if you're familiar with The Five Love Languages by Gary Chapman which I recommend every single person read....I read it years ago when I was first pregnant). Anyways, because she is Acts of Service, I reap the benefits sometimes. She had Wednesday off from work and I had to go grocery shopping when I got out of the classroom......when I got home and had everything unpacked she told me she had vacuumed the kitchen and half bath while I was at work. Then she made me an amazing latte with a dollop of maple syrup and creamy oat milk. Heaven! Since I didn't have to vacuum and since she was making her own dinner and Dave was still working, I could sit and relax for a few minutes! I'm thankful she is a young woman with a servant's heart....and that she has a frother to make amazing lattes!
That wraps up the week of blessings for me.....there were other little blessings, too of course like warm, thick leggings for work; a new hair cut and color; hugs from little people-students; and lesson plans all prepared for next week!!
Whatever you do this weekend, I hope you find some time to relax, read a good book or take a nice walk in the fresh air.

Hi Faith. Sounds like a good, albeit cold, week. So glad your daughter is so kind and helpful. That vegan pesto looks delicious. That movie sounds interesting. I remember the book but never read it. Good smelling body wash or body scrub is a favorite of mine as well. Love it! Glad you had some nice moments to relax and read this past week. Have a good weekend.

I love pesto too ! Only pasta with a bit of olive oil and pesto and on the top parmesan cheese ! Lovely plate and quickly made ! In my husband's family everybody does the pesto themselves. I rhink they keep it in glasses well cloed to use it several times. I noticed lately that I eat less and less meat and when it's only chicken or turkey. There are so many plates where meat is not needed at all. The couscous too !
Freezing rain is the worst!! Glad to hear you were safe and sound getting to work. I love nice body scrubs. That sounds like it smells lovely. What a nice "gift" Claire gave you. I have never read Watership Down and I've not seen that on Canadian Netflix, maybe I'll do a search for it. Right now Hubby and I are enjoying a Canadian made detective series called Hudson and Rex filmed in New Brunswick.
Oh yikes! The photo of the ice on the car made me shiver. I'm glad your school district is sensible to not expect children to be out in that dangerous ice. And two hours of workers clearing roads...I appreciate their hard and cold work.
I make my own pesto, too. Yum! Basil, garlic, a little dab of lemon juice, nutritional yeast, and yes, done in the blender.
I'll have to look up Watership Down.
Oh, and can I borrow Claire for a bit?

I hope you get your walks in. Even when we had covid, we took walks and just stayed away from other people.
I agree with Susanne, ice is much worse than snow. We got a few inches of snow last night, but thankfully it's melting off the roads.
The pesto sounds great! Glad it was relatively easy to do.
I enjoyed Watership Down (the book) for the first time a few years ago. I'll have to look into the series.
I loved 2-hour delays when my kids were in school.
