CHRISTMAS WEEK MENU

How is it the week before Christmas?!

I'm ready though...are you?

Gifts are wrapped and under the tree...except for the two that still haven't been delivered......

.....two parties are down, 1 to go before Saturday........

...choir practices are done minus dress rehearsal Thursday evening......

......and cookies are baked minus the chocolate shortbread ones I'll do Friday because....NO SCHOOL that day.  You heard that right...my Christmas vacation from teaching begins Thursday at 1:45 pm......

SO.....what do you cook for dinner in a busy week?  I keep things simple and this year I'm even keeping Christmas Eve and Christmas Day simple.

  • SUNDAY:  We had a long rehearsal and  then I had a tea date with Claire at her apartment so afterwards, I stopped at T Swirl for a savory crepe.  Dave bought himself Mexican fast food.

  • MONDAY:  Claire's coming for dinner:  pulled pork sandwich for Dave and pulled BBQ Jackfruit for Claire and I; roasted Squash; brown rice for people who  don't want bread (me).
  • TUESDAY:  Celebrating Claire's birthday a day early.  She and Courtney will both be here for dinner:  Veggie Pot Pie; Steamed Broccoli; vegan Chocolate Crinkles for dessert

  • WEDNESDAY:  Grilled Chicken (or oven roasted herb chicken if raining); Asian Veggie mix

  • THURSDAY:  Dress rehearsal Night:  tomato basil soup and grilled cheese sandwiches cause we are gonna be rushed!

  • FRIDAY: Homemade Pizza with Vegan Pepperoni (yes, it looks and tastes just like the animal product kind only NO FAT from an animal.  is made with pea and potato protein and is SO good...I didn't believe it until I tried it.  It's a little lighter in color and the texture is smoother).

  • CHRISTMAS EVE:  the church will feed us between the 2 and 3:30 pm services and then after 6 pm, Courtney and Claire will meet us at the house and stay for a late evening supper of Raw veggies; chips; deli meats; breads; my famous peppermint chocolate fudge.  and of course THE MOVIE MUSICAL:  WHITE CHRISTMAS.  Because....tradition!

  • CHRISTMAS DAY:  Breakfast:  bagels and all the fixings including everything seasoning and avocado;  turkey bacon; seitan bacon (vegan bacon); fresh citrus fruits; boiled eggs; mimosas; coffee
Lunch/Dinner: Italian Bean Soup; Dinner Rolls; Salad

and of course.....I have 3 different kinds of cookies:  Chocolate Shortbread Cut-outs, Gingerbread Cookies,  Chocolate Crinkles, and....my sister Hope surprised us with homemade Peanut Brittle.

The diet starts Monday.

Your Christmas week menu sounds great. I am going to have to look for that vegan pepperoni. Have a great week and stay warm!
