Spring Break!! How I love being on Spring Break. I like to spend at least one day in the mountains (this week that plan is for Thursday), one day out in my hometown area, and one day to really thoroughly clean my house from the winter grime. I save washing windows for the end of May/beginning of June when all the spring pollen has finally stopped blowing around.
Because I'm on Spring Break, I have some easy dinner plans too. Having a plan helps me stay on a grocery shopping budget, helps me see what types of protein and vitamins we are ingesting, and where we might need to add more, or delete some. It also helps me try new recipes!
I had one blogger friend ask me if I stick to the plan I lay out here on the blog. The answer is NO. I use the guide as a means to shop for the ingredients or make sure I have the spices, etc in my cupboards. Sometimes I might make Tuesday's meal on a Thursday or we might end up going out to dinner on a Saturday, etc. This is just the guide I use for the week and also sometimes my daughters ask me for a recipe so I can quickly find it via this blog. Any of you are welcome to search my recipes and download the page, print it out. The recipes are not under my copyright.
DINNER PLANS
- MONDAY: Dave: Missions Dinner at the church; Faith: dinner date with friend
- TUESDAY: Grilled Blackened Salmon; Tossed Salad; Garlic Bread
- WEDNESDAY: Slow-Cooker Chili (with vegan "beef") and Cornbread; Raw Veggie Platter
- THURSDAY: Tofu with Roasted veggies and Brown Rice
- FRIDAY: Shrimp Pasta Salad; Pumpkin Squares to be shared with our small group
- SATURDAY: Grilled Lemon Chicken; Tossed Kale Salad; leftover pumpkin squares

Ugh I hate Kale but apparently it's SOOOOO good for you!!!! I'll give it another go. Ummmm that pumpkin thing sounds amazzzzzzzzzzing!!
