FIRST FULL WEEK OF JUNE DINNER MENU

 

Last week I didn't make an outline for dinner planning and I felt it.......it's so much easier to shop at the grocery store and farmers market when I have a plan.  Here's what's on the menu for this upcoming week.  It promises to be a very busy week. ......what I have down for Wednesday might actually switch to Thursday but at least I have a plan and all the ingredients on hand!

  • SUNDAY: Roasted Italian Herbs Chicken; Cheesy Potato Casserole; Steamed Asparagus

  • MONDAY: BBQ Pork Ribs for Dave (Grilled); BBQ grilled Tofu for Claire and I; Brown Rice, Broccoli Salad

  • TUESDAY: Tacos with ground Impossible Beef (plant-based); Mango Salsa; Blue Corn Chips; Cucumber Salad


  • THURSDAY:  Grilled Impossible Burgers with avocado, lettuce, tomato; leftover Cheesy Potato Casserole; leftover Cucumber Salad (if any is leftover!)


  • SATURDAY:  Vegan Chicken Tenders; Grilled Beets/Red Potatoes; Steamed Cauliflower

We love salad at our house and eat all sorts. When asparagus is fresh and tender I love this one https://alexandracooks.com/2021/05/02/raw-asparagus-salad-with-walnuts-parmesan/

I also love spinach, very thinly sliced onion, chopped pecans or walnuts, sliced strawberries, feta and a raspberry or cranberry vinegarette dressing. Also a fave is a mediterranean with tomato, onion, cucumber, olives, peppers, feta with an italian type dressing. And a third go to is chopped romaine, chopped apples, pecans or walnuts and miracle whip type of dressing or a creamy dressing.
