I seriously need to get to the grocery store this morning. I realized we are out of a lot of our basic staples. So to stick to a budget that's less than $200, I wrote out my menu plan for evening dinners this week. Lunches will be leftovers, hummus and fresh veggies, guacamole and veggies with whole grain crackers, or canned soups. Dave leaves for the missions trip at dawn on Friday so when it's just me, I tend to eat salads. I have a somewhat busy day: groceries, drop off a letter and package at the post office, return a book to library, walk for 2 miles; laundry; vacuum upstairs carpeting/stairs; finish the chapter for the book group. Who says retirement is boring??
- MONDAY: Baked BBQ Pork Chop (for Dave); Stir fry Orange Tofu (me); Cous Cous Scramble (Cous-cous, green beans, carrots, red onion, sweet potato)
- TUESDAY: Souper Enchiladas; Asian Salad; fresh fruit (melon, pomegranate, blackberries)
- WEDNESDAY: Creamy Italian Pasta Salad; Italian Herb Chicken Breasts
- THURSDAY: Vegan "turkey" fillets; Roasted Sweet potatoes with broccoli and onions; steamed green beans
- FRIDAY: I'll either go out with a friend or order food for pick up.
