Since I can begin to add my normal foods back into my diet after being told to stay on a liquid and/or soft foods only diet all week after the tooth extraction, I've been looking through some of my recipes for some cold weather meals for the upcoming week. Our temps have dipped into more typical for us Autumn temperatures although we have a forecast that says we might get back towards 70 a few days this week. So here's my menu for dinners this week. I try to stick to this but sometimes I swap days. It keeps me on a budget when food shopping, too.
- SUNDAY: Autumn Squash Soup with Pumpkin Seeds and Buttered Soft Rolls; Swedish Apple pie
- MONDAY: Grilled or Baked Salmon; Rice with Herbs de Provence; Sauteed Zucchini/Tomatoes/Carrots/Sweet onions
- TUESDAY: Vegan "steak" tips over Roasted peppers/cauliflower/green beans/onions with Asian Ginger Dressing
- WEDNESDAY: Quicker Chicken and Dumplings; Cranberry Sauce
- THURSDAY: Vegan "fish" tacos with brown rice, chopped lettuce, tomatoes, onions and avocado; watermelon with blackberries
- FRIDAY: Garden Veggie Creamy Orzo (using almond milk vs dairy); Garlic Toast; Baked Haddock (for Dave). The recipe I've linked you to doesn't include a 1/2 cup of northern beans that I have since added in to this recipe. It gives you some protein along with all those wonderful veggies.
- SATURDAY: Not sure yet......depending on the weather it might be something on the grill plus a tossed salad or Slow Cooker Meatball Soup with vegan "beef" meatballs and Apple Spice Cookies for dessert. We also might be having company that evening and if so, it will be the slow cooker meatball soup.
