I don't have a weekly menu filled out yet this week. I have a dinner plan for tonight, but the rest of the week I will just decide that morning depending on the various activites we have going on. I think this week will be a "stay at home and get stuff done around the house week" along with the back to school supply shopping I need to do for my 3rd grader as the sales are on now and in August when we get back from our beach house vacation, all the good stuff will be picked over or gone!
Today I am posting a muffin recipe I plan on trying later today for tomorrow's breakfast. I make the batter the nite before and then just pop in the oven in the a.m. while the coffee is brewing. My husband did the coffee this a.m. and totally surprised me...what a delicious scent to wake up to!

(this recipe is from a book I bought at The Farmers Museum in Cooperstown. The book is "Old Fashioned Muffin Recipes" by Bear Wallow Books c. 1993)
Fresh Peach Muffins
2 c. flour
1 Tbl Baking powde
1/2 tsp baking soda
1/2 tsp salt
1/2 c. sugar
1/4 tsp. cinnamon
2 eggs
1 1/2 c. fresh peaches, peeled and diced
1/2 c. canola oil
1 Tbl. lemon juice
Combine dry ingredients in mixing bowl. In separate bowl, combine remaining ingredients. Make a well in center of dry ingredients and pour in liquid mixture. Stir until just moistened. Fill muffin cups to 2/3 full Bake at 375 for 20-25 min.

Faith's breakfast tip: place piping hot muffins in a wicker basket lined with a summer pattern cloth napkin. Tuck napkin edges around the muffins to keep them hot. Serve with pretty breakfast plates and steaming hot coffee of your choice in mugs. Put fresh blueberries, blackberries and cherries in a ceramic bowl. Put out whole grain cereals such as Kashi multi-grain, cheerios, Shredded Wheat. Add a pitcher of skim milk and you have a classy, simple breakfast. Your family members can choose their own cereal and add fruit toppings to their bowl. To cut down on fat, do not serve butter with the muffins. They are tasty just on their own or "plain" as my family likes to say!
