Back to work and school today.

Easter Sunday was awesome! We loved our service. Went out to dinner in Lake George where there is still snow on the ground! Had a delicious meal followed by decadent desserts and coffees. Enjoyed time with my sister and nephew. Came home and spent the late afternoon reading, talking with my hubby, and doing a load of laundry. (yeah, on Easter...because....am busy this week and wanted to get an early start on it!)

My oldest daughter totally shocked me on Sat. by offering to rearrange 3 kitchen cupboards and cleaning them out as part of my spring cleaning "to-do" list. I had done most of the kitchen a couple of weeks ago but hadn't had a chance to finish those cupboards. So...she helped me totally rearrange, throw out old stuff like plastic containers we used for hiking/camping when they were preschoolers, etc. She did a fantastic job and probably came up with the lay-out in a much more organized fashion than I could have!

Here is my dinner menu for the week. Always subject to change of course, especially if I get called in to jury duty this evening. I need to call a certain number after 4 pm to find out if I have to serve at town court tonite at 6...what a pain! I dislike jury duty. I find it very inconvenient.

  • Mon. = Soup and sandwiches if I have jury duty/leftover ham/pasta dish with steamed peas if I don't have to go in.
  • Tues. = Chicken and Rice Casserole, Fruit Cup, Steamed Broccoli/Cauliflower
  • Wed. = Italian Hamburgers with Sauce, Parmesan Pasta, Tossed Salad (Courtney to attend Teen Coffeehouse at Youth Center)
  • Thurs. = Turkey Salad, Chicken Tenders (the girls), Sweet Potatoes with Nutmeg, Raw Veggie Platter (Dave to teach his life::group, jr. high boys)
  • Fri. = Grilled Salmon (if warm out!), Garlic Cous-Cous, Spinach, Steamed Corn
  • Sat. = Oven Fried Chicken Parmesan, Ranch Pasta Salad, Apple Cheddar Tossed Salad
Saturday is the day Claire gets her bedroom "makeover" so my brother in law will be here doing that job. My sister, Hope, will also come down with him and we will hang out while he does the wallpaper and my husband works on the kayak rack. They will stay for dinner.
We have a full week! But hey....the girls and I have Friday off due to a teacher workshop and I don't need to attend since I am an assistant this year! YEAH! (it just means that I will be prepping the walls and removing furniture out of Claire's room most of the day...oh well....)
