Tuesday's Treat


I'm sharing a treat with you today. I've purchased many fresh, local apples! So....before they all turn bad, I'm making some muffins for breakfast tomorrow or after school snacks. It's a combination of a couple of different recipes that I just kind of made up one day. My kids love these and that's what matters to me!
Please note: you will need 3 bowls for this recipe. (2 small, 1 large)

Oatmeal-Apple-Chip Muffins

1 1/4 c. quick oatmeal
1 1/4 c. skim milk
1 1/4 c. flour
4 tsp baking powder
1 tsp. salt
1 egg, beaten
1/2 c. canola oil OR applesauce
1/3 c. brown sugar
1/2 c. chopped, peeled apples (I use JonMacs or Empires)
1/4 c. chocolate or cinnamon chips
In small bowl, mix together the oats and milk. Allow to stand for 30 minutes.
In different bowl combine flour, baking powder and salt.
In yet another bowl, mix the egg, oil, sugar and chips. Stir this mixture into the oat mixture.
Stir well and then add to the dry ingredients. Stir just until moist. Do not overmix.
Lightly spray (I use canola oil spray) muffin pans and pour in batter.
Bake in oven set at 400 for 15-20 min. or until toothpick comes out clean.

Oh yum! And I'll bet that applesauce gives it extra flavor and makes them really moist. I've never seen cinnamon chips around here. What's the brand name for them?

Hi Susanne: the brand name for the cinnamon chips is Hershey's. Found in the chocolate chip section with the baking goods. Happy Baking!!
