Super Simple Chicken and Dumplings

Do you like easy dinner recipes??

I like quick, simple, nutritious (whole foods, low fat or fat-free) and tasty meals for work nights or even on summer evenings..........recipes that don't take long to put together and ones in which I am likely to have the ingredients already stocked in my cupboard or fridge!  After working in a classroom all day and then running errands/doing housework/playing taxi to the 13 yr old, the last thing I wanna do on a work nite is cook an elaborate dinner.  Yet...we are into more healthful choices that what local fast food places offer....so...here is a recipe I tweaked from another recipe that includes delicious dumplings.....the easy way!!

Super Simple Chicken and Dumplings

1-2 large chicken breasts, cooked and cubed
1/2 pkg (12 oz pkg) of frozen mixed veggies, thawed
1 can fat-free cream of chicken soup
1 1/2 c. skim milk (or 2%)
1/2 tsp poultry seasoning
(or rubbed sage)
1/4 tsp garlic powder
BISCUITS
1 c. Heart Smart (fat free) Bisquick
1/2 c. crushed French's onions
(I crush mine in a ziplock baggie by squeezing the baggie)
7 TBL skim or 2% milk
1/2 tsp dried parsley

  • Place the first 6 ingredients into a large stock pot or Dutch Oven
  • Bring to a boil, stirring occasionally. Once  to the boiling point, turn heat down to a simmer.
  • Meanwhile, mix the biscuit ingredients together in a small bowl until just moistened. Do not over mix!
  • Drop by teaspoonfuls onto the simmering stew.
  • Cook, uncovered, for 10 minutes.
  • Cover and simmer (low heat) 10 minutes longer.  DO NOT LIFT THE COVER WHILE SIMMERING!!!!
Serve with a fresh fruit salad or fresh, sliced fruit such as strawberries, melon, kiwi or oranges.  I also serve with a dish of cranberry sauce.

TIPS!
Here are some easy tips:  pre-cook the chicken breast the night before while preparing lunches/cleaning the kitchen, etc. I often cook the chicken while eating dinner the evening before OR while getting ready for work. Wrap in plastic wrap and keep in fridge until needed. 

Keep Heart Smart (fat free) Bisquick on hand in your fridge. (I keep a box in there all the time....it comes in handy for certain recipes and lasts longer in the fridge than in the cupboard).

Stock your cupboard with chicken broth, creamed soups (I buy the low fat or fat free ones), spices, French's onions (handy for several recipes), and a variety of beans.
