I put a photo of these cookies I made on Facebook and all of a sudden several friends wanted the recipe.
So....here it is! One of my favorite cookie recipes......and it's a way to get my daughters to eat pineapple!
PINEAPPLE CHOCOLATE-CHIP COOKIES
2/3 c. shortening
1/2 c. sugar
1 c. brown sugar
2 eggs
2/3 c. crushed pineapple
1 tsp vanilla
dash of salt
3 1/4 c. flour
1 tsp baking soda
1/2 pkg semi-sweet chocolate chips
(or just buy a 6 oz bag)
- Blend the first 4 ingredients together, stirring well.
- Add in the pineapple and vanilla and stir until thoroughly mixed.
- Add in the dry ingredients and stir well.
- Drop by spoonfuls onto lightly sprayed (i use baking spray) cookie sheets.
- Bake in a 350 degree oven for about 10 minutes.
- Let cool for about 3-5 minutes and transfer to air-tight container.
TIPS
You can add white chocolate chips in place of the semi-sweet chips.
For less sugar, substitute natural applesauce (unsweetened) in place of the white sugar.
This recipe makes more than 2 dozen cookies so we freeze several in a baggie for another time. These cookies do well for 1-3 months in the freezer.
