Slow Cooker Low Fat Scalloped Potatoes and Ham

I love using my slow cooker!!

I even use it on the weekends, sometimes and yesterday I did this recipe.

It's a low-fat version of Scalloped Potatoes and Ham.  and it was a hit! (well, our 14 yr old didn't like it...she says she still doesn't like hot ham.....she only likes deli ham on a sub...so she made her own dinner!)

The recipe is super simple...I originally got it from a Simple and Delicious magazine issue and it just happens to be in the current April/May issue!

Here is my version (I replace cream of mushroom soup with cream of potato because I can never find the low-fat mushroom soup!). The brand of soup I use for this recipe is Campbells.

LOW FAT SCALLOPED POTATOES AND HAM

1 can cheddar cheese soup, low fat version
1 can cream of potato soup, low fat version
1 c. skim milk
6-8 red potatoes, peeled and sliced
1 lb canned cooked ham, cubed
1 small sweet onion, thinly sliced
dash of paprika
dash of pepper (optional)

  • Combine the soups and milk in a bowl and set aside.
  • Spray the sides and bottom of your slow cooker with PAM spray. I use the canola type.
  • Layer half the potatoes, ham and onion and pour half the soup mixture on top.
  • Repeat layers.
  • Sprinkle with paprika and pepper.
  • Cover and cook on LOW for 8 hours.
I serve this with 2 side veggies: steamed asparagus and sweet carrots with dill; fruit cup or ice cream sundaes for dessert.

I'm a crockpot user year round and sometimes Sundays is when I use it the most. That way dinner is ready and waiting when we get home from church and everyone is starving.

We love scalloped potatoes around here. I usually make my own white or cheese sauce though.

Hi Susanne! yes!! i use mine on Sundays sometimes too. I especially like it for busy Saturdays or Mondays/Tuesdays when Claire has rehearsal at school (theater) followed by 2 hours of ballet...we can dash home, eat and then get to ballet and there's still dinner staying warm for Dave who passes us on the way to ballet class! I could NOT live without a crockpot!! (I used to make my own white sauce too unless I saw this less time consuming, lower fat version!) it was a HIT with dave! :)

I am copying this one down! One of my FAVES!!!!!!!!!!! I've never made it. Do you have a good recipe for chicken and dumplings? Another fave that I have never attempted :)
