I love tweaking recipes to make them a bit more nutritious for my mostly vegetarian family.
The photo pictured above is a recipe I found online that called for chicken. I tweaked it and made something similar minus the cheese and chicken. The family loved it and I decided to share it with you. It's super easy to make for those after-work thoughts of "what should I cook for dinner?"
Since we love fresh, homemade meals, this was perfect. I think you'll think so too!
Faith's Veggie Noodle Skillet Dinner
1 pkg of yolk-free egg noodles
1/4 c. coconut or olive oil
1 c shredded carrots
1 1/2 c. chopped broccoli
1/4 c. chopped red onion
2 cloves garlic, minced
1 Tbsp. dried basil
1 can low-fat cream of chicken soup
1/2 c. skim milk
1/2 c. chopped red pepper
- Cook noodles according to package directions, drain and keep hot.
Meanwhile (while noodles are cooking):
- Saute garlic, onion, carrots, broccoli and peppers in the oil until crisp-tender.
- Stir in cream of chicken soup and the milk. Mix thoroughly.
- Add the dried basil and toss.
- Pour noodles into a large serving bowl or platter and add the veggie mix.
- Toss gently.
Serve immediately with fresh fruit like a melon salad. (we like cantaloupe, honeydew and watermelon, cut into chunks or use a melon baller).
