SUPER EASY LUNCH or SNACK: ACAI BOWL

SUPERFOODS LUNCH!

I made this for lunch on Saturday and it's so easy I plan on making this often!!  I might make it for breakfast on a weekend morning!

I had my first acai bowl at UNH last weekend. Our youngest daughter's dorm is just a short walk away from The Juicery where they serve this dish.  They use peanut butter.  I use almond butter.

Acai is difficult to find in our area of NYS.  I can find the powdered package stuff for smoothies but I don't want that...I want the actual acai berries.  So.......I used frozen berries and mango instead.  I got the idea from a couple of online recipes.

Here is MY recipe for a healthy super food lunch.  I call it an energy bowl because I had so much energy after consuming this and it left me full for a good 4 hours.


Faith's Energy Bowl

1 c. frozen raspberries, blueberries, mango mix
1/4 c. or less of unsweetened almond milk or coconut milk
1/4 c. orange juice (optional...i don't tend to put this in)
1 Tbl of Agave nectar (raw)
1/2 banana,  peeled and sliced

BLEND ALL OF THESE INGREDIENTS UNTIL THICK... LIKE SORBET
if too watery, just add more fruit!

Place in a bowl.

Then on top, add the following:

a scoop of Almond butter 
1/2 c. of Pumpkin-flaxseed granola (or granola of your choice...I prefer the pumpkin flaxseed or vanilla almond by Nature's Path)
on top of the granola add in a handful of shredded coconut,
chopped walnuts and/or pecans
mini chocolate chips or grated bittersweet chocolate
(or if you want it to be totally vegan, buy cacao nibs)
the other half of the banana, sliced,  for around the edge of the bowl.

ENJOY!!

This recipe makes ONE serving.


PLEASE NOTE:  If you want acai and can't find the berries in your store, you can buy the frozen acai packets for smoothies and use 1 packet per serving.

OPTIONAL TOPPINGS and Add-ins

blueberries, strawberries
peanut butter, sunflower butter
in stead of almond milk, you can use cow's milk if you aren't vegan
coconut milk or coconut water
chopped peanuts or hazelnuts
raisins

Yum!
For the granola, I will use my homemade granola. The recipe is on my blog. It has a lot less sugar than even the Nature's Path granola.
