Are you trying to be intentional about healthful snacking?
I am.
As I've gone through menopause into post-menopause, I've discovered that I really can't digest well, anything with milk chocolate or dairy products. That's rather common according to my nutritionist and ob/gyn. So.....I've been doing some research and took an online course about heart health and have discovered many recipes deemed "heart healthy" that also happen to be "digestive friendly".
Here's a very easy snack recipe for you to try!
TIP: these also would work well to stick in your hiking backpack. Place a few in a small plastic container and add to pack.
CHIA SEED PROTEIN BITES
1 1/2 c. quick cooking oats
1/2 c. creamy almond or peanut butter
1/2 c. chia seeds
1/2 c. raw honey
1/4 c. vanilla or chocolate protein powder
1/4 c. unsweetened shredded coconut
extra coconut, optional
- In a large mixing bowl, combine the first 6 ingredients.
- Refrigerate for 1 hour or until firm enough to roll into balls.
- Shape into 1 inch balls. Roll in extra coconut, if desired.
- Store in the fridge in an air-tight container.
