Mid-July Faves

Wow...mid-July already!
We just finished the 2nd week of summer school....only 4 to go and then another nice summer vacation!

This past week hasn't been anything spectacular but it's been filled with little moments that made me smile....so I will count those as blessings and give thanks for them..five things that make up my "faves" list.....I do this with others who are intentional about sharing 5 things and we link up at Susanne's, our hostess.

FIVE FAVES

Cucumber Salad
  • CUCUMBER SALAD:  It's been very hot and humid here in the capital region of New York State...not as humid as out in the central/upstate part where I'm orginally from....but definitely hot enough for the central air most of the evenings.  I made some yummy cold dishes for dinner this past week and this cucumber salad was a hit.  It made for nice leftovers the next day too for work lunches.  I'm thankful for an abundance of fresh veggies.


Backyard s'mores!
  • BONFIRE!  Last weekend, both evenings were cool enough to enjoy a fire in the firepit.  Dave made a really nice fire and Claire was home so she and I roasted marshmallows and I made s'mores. She buys vegan marshmallows that don't contain the gelatin from animals.  And she buys the dark vegan chocolate.  Vegan marshmallows are actually tastier and less sugary along with being less sticky.  It was a lovely evening in the backyard......I'm thankful for simple summer pleasures.


    peach Bellini
  • ICED DRINKS!  Over the weekend I pulled out the pitcher my sister Joy gave us for Xmas along with a packaged peach Bellini cocktail mix. All I had to do after blending some white wine (we like Riesling from the Finger Lakes region of NY) was add ice to the blender and voila!  It was delicious and so refreshing. I'm thankful for gifts we can use in the summer time! (You probably can't see the writing on the wine glass but it says "I'd rather be hiking" with a silhouette of a hiker.  :) We've also enjoyed homemade lemonade the way my dad used to make it (with very little sugar) and iced tea.

  • AFTERNOON AT THE BEACH:  Courtney had plans with friends after church on Sunday so after Dave treated Claire and I to this pizza place (our FAVE!!), she and I changed into swim gear and took off for the lake about 30 min north of our home in the foothills of the Adirondack Mountains.  It was 86 degrees down here in town but up there it was only 77.  And it wasn't very humid at all up there. We read books, chatted, took a dip and just enjoyed a late afternoon at the beach. When the beach closed at 6 pm we  then stopped in Saratoga for a bite to eat at the vegan cafe.  I'm thankful we had this relaxing afternoon together.

  • BALLET NIGHT! I bought tickets for the NYCB who are in town for 4 nights at the Saratoga Performing Arts Center which we attend every year.  We've been doing this for the last 10 years now and we just love it.  I bought the tickets back in February for Coppelia.  It's my 2nd fave story ballet (behind Sleeping Beauty).  It was absolutely exquisite.  I'm so thankful Claire and I had this mother daughter date.  It's fun to get dressed up with full make up on and attend the show.  And we got doubly blessed because one of our fave principal dancers danced the role of Swanhilda/Coppelia.  Click on the link above (words in bold print) to read the story of Coppelia if you aren't familiar with it.

It's a heat wave with high humidity throughout much of the Northeast.....but it's still better than our winter January and February weather!  I'm thankful for central air and fresh water lakes!

Those are my favorite kind of weeks - nothing major but lots of little blessings. In the summertime I like to put my morning OJ in the freezer while I prepare the rest of my breakfast, and then by the time I'm done it has just a few ice crystals in it. Then I add some ginger ale. I was inspired by a punch I had at someone's shower with a slushy citrusy blend of juices that had been frozen and then partially thawed before the shower and supplemented with ginger ale. So good.

Your afternoon at the beach and mother-daughter ballet date sound so fun.

The heat index here is supposed to hit the 100s. The temps aren't that high, but humidity is in the 90s. So glad for AC!

How wonderful to spend time with your daughters! I love fresh water lakes but don’t get to one very often. It’s beastly hot here. I am looking forward to Autumn!

The afternoon at the beach sounds absolutely wonderful. Who knew about vegan marshmallows? I love fire roasted marshmallows but only have them about once a year when we go to Waterton and have a picnic as we don't have our own firepit. And last year there were fire bans everywhere. I love veggie salads like that one and have made several this summer already.

I'm so late getting around to read the FFFs. Mostly have headaches to blame for that. Your week sounds lovely--afternoon at the lake, bonfires at night. Lovely! And dates with your girl!
