JANUARY 14 -20 MENU PLAN

 So this past week I've been fighting my first wicked head cold/mild flu (?) since Tuesday.  So our meal plans pretty much changed  for a couple nights. Last night I felt ok to go out to an Indian place right down the neighborhood from us so that was nice. I shared the photos of the longest crepe I've ever had on Insta and FB.  It was a vegan option and SO super good.....

So now I'm planning some nutritious dinners for the upcoming week.  How about you? are you a meal planner? I tend to plan like below but sometimes will switch up the evenings. Friday is always take out, go out or do something super simple due to working full time and just being so tired by Friday evening. One day I WILL retire!


  • SATURDAY (tonight!): Leftovers from the Indian restaurant.  I have leftover crepe (made with rice almond) that will literally feed me for another meal.  The filling is gone so I will make a tofu scramble of browned tofu, diced carrots and chopped broccoli/onions/yellow pepper and then some cooked rice.  Dave has a spicy dish leftover that he will have on his leftover basmati rice. 

  • SUNDAY:  Fish Tacos with Coleslaw and Autumn Squash
  • MONDAY: Stuffed Pepper Soup and Biscuits (Claire's coming to dinner so the "beef" will be Beyond Beef which is totally vegan). 

  • TUESDAY: Thai Naan Pizzas and Tossed Salad (this was on the menu for last week but we made our own dinners that evening as I was not feeling well)

  • WEDNESDAY: Baked Italian Chicken Breasts, Cheesy Ditalini, Sweet Carrots and Steamed Spinach 

  • THURSDAY: Ravioli stuffed with Chicken and Garlic; Tossed Salad; Garlic Breadsticks

  • FRIDAY: Tomato Basil Soup and Grilled Cheddar Cheese Sandwiches (early quick dinner due to Small Group at 7 pm. ). 

  • SATURDAY:  Ginger Chicken and Quinoa Stew; Steamed Broccoli (the stew is done in the slow cooker.....let me know in the comment section if you'd like this healthful recipe). 

And ...that's the plan!
My Goal this week is to follow this plan!!

Wow, your menus are always so creative. I think my favorite would be the grilled cheese sandwiches and tomato soup. Hope you have a good Sabbath!

Stuffed pepper soup - that sounds delicious! Sounds like you have been eating well this week:)
