2nd Week of February Menu Plan

 



Menu planning is so helpful for visits to the grocery store and for coupon cutting. Of course with the local grocery store app, I no longer need to cut coupons although with some name brands, I do get them in a flyer that  comes in our Sunday morning paper.  Now that we are empty nesters, we are definitely spending less at the market each week. 

Here's our plan for this week and of course I tend to move things around.....but this will help me  get groceries after work tomorrow. 


SUNDAY:  We had a Family Valentines Dinner and both girls came over. I made personal mini chicken pot pies (vegan ones for our ballerina girl) and added in steamed beets and broccoli.  For dessert, we had my famous chocolate shortbread heart cookies. 


MONDAY:  Tofu Scramble with sauteed tofu/orange sauce, red potatoes, carrots, broccoli, beets, cauliflower, sweet potatoes, garlic over brown rice. On the side we will have fresh tangerines. 


TUESDAY: VALENTINES DAY.....I THINK we are either going to order out or go out to a local restaurant....I'm really not sure yet! 


WEDNESDAY: Pasta and plant-based "meatballs" with red sauce; tossed salad


THURSDAY: Baked Italian Chicken, Risotto,  Cucumber Salad; Green Beans

FRIDAY:  It's another book group (small group) night so I will either make a Veggie Frittata with Applesauce OR Turkey/Cheddar/Apple Sandwiches and Tortilla Chips with Salsa. 

SATURDAY:  Slow Cooker Chili and Honey Cornbread

I have several dinners I love to cook but my ultimate fave in the colder months is my Slow Cooker Sloppy Joes.

My fave food to get delivered to our home is The Caesar Salad Wraps and Potato Salad from our fave local diner.

Your baked Italian Chicken sounds really good. I will have to see if you have posted the recipe online. I think Charly and I are going out for dinner tomorrow. We are thinking about either a Greek or Lebanese place - both are nearby and we have been wanting to try them. I hope that you and your hubby have a Happy Valentine's Day!
