Today I am thanking God for my slow cooker and central air conditioning. It's another hot, humid, and hazy day here in eastern New York State. At least it isn't raining...we have had enough!! Most of the friends and family I talk to say we should have received this rain in early Spring. I agree. But we did need it. Now it can stop.
I'm planning my week and have a mix of recipes on here that work well in an air conditioned home or on the grill once the high heat breaks which it's supposed to come Tuesday evening. I have quite a bit going on this week including a trip with my youngest daughter Friday evening to see the NYCBallet while they are performing up here in Saratoga Springs. It's something we do each summer. Other days I have hiking trips planned and shopping trips. All involve leaving my immediate area so quick dinners are what's on the menu. I love the abundance of fresh summer produce that's for sale too.
Here's what cooking around our house:
- MONDAY: Slow Cooked Vegan (Beyond Beef) Meatballs and Marinara Sauce over Pasta Shells; Italian Green Beans; Watermelon Salad
- TUESDAY: Veggie Pizza; Black Bean Tossed Salad
- WEDNESDAY: Grilled Chicken with Lemon-Garlic Marinade; Fruity Pasta Salad; Fresh Peaches
- THURSDAY: Grilled Impossible Beef Burgers; 2-Season Squash Medley
- FRIDAY: early dinner : Vegetarian Hummus Wraps; Baked Beans; Low sodium Pretzels
- SATURDAY: FAMILY BBQ PICNIC in central NYS
