WEEKLY MENU

 

Now that I'm no longer teaching, I'm finding time to peruse some old cookbooks, tweak a few favorite recipes to be a bit more healthy/less fat/less sugar and poring through the Yummly app for some new ideas.  I love having time to do this!

I came up with an outline for the week.  I tend to be flexible with my plan......looking ahead, the dinner I planned for Thursday might actually happen on Saturday depending on if we hike or kayak and wanna come home to something quick and easy. We are trying to avoid take out/going out for the next couple of weeks mainly because we spent a lot of money in June and the beginning of July between plumbing issues and the trip to Vermont plus our anniversary and then other things that came up. I have no money coming in of course and I'm not filing for social security until I absolutely am forced to as then I'll get more in the check! So we are watching our budget. 


Here's what's cooking at our house: 


  • MONDAY: Vegan fish fillets with homemade chilled tartar sauce; Steamed beets; Spinach Salad with walnuts and mandarin orange slices 

  • TUESDAY:  Slow Cooker BBQ Pork Chops for Dave (Cauliflower "wings"  for Faith); Steamed Broccoli; Garlic-Herb Cous Cous; Watermelon Salad

  • WEDNESDAY: Salad Nicoise with 3 Cheese  Texas Toast; leftover Watermelon Salad

  • THURSDAY: Italian Pasta Salad (with vegan "pepperoni"); French Fried Onion Biscuits; Peach Cobbler
 
  • FRIDAY: Grilled Vegan Burgers; Three Bean Salad; Peach Cobbler

  • SATURDAY:  Grilled Chicken with Italian Seasonings; Stir Fry fresh local zucchini, shredded carrots, onion, cherry tomatoes, parmesan

Vegan fish fillets - now that sounds intriguing! What do you make them from? Peach cobbler always sounds good on any menu!:) Have a wonderful week. Btw, isn't reading old cookbooks relaxing? I do enjoy it!

your menu sounds delicious! I make a menu but sometimes change the days around as our schedule changes during the week.

I have a great big watermelon that isn't being eaten fast enough by the dayhome kids so thanks for the idea to make a salad! I'll have to look up a recipe for that. I have not even thought about food for the week yet. Guess I should get on that. LOL.
