I finally have a weekly dinner plan again. I've already been to the grocery store today and I have enough food I think to last us until we leave for our trip across NY, into Canada and over to Lake Huron! We leave in one week and I cannot wait!!
Here's what's cooking at our house this week: (remember: some of this might change.....but this is my outline for the week)
- SUNDAY: Vegan Sausage, Zucchini Boats, Sweet Potatoes
- MONDAY: Vegan Turkey Fillets with gravy; Mashed Potatoes, French Green Beans, Cucumber Salad
- TUESDAY: BLT Sandwiches, Watermelon Slices (i'll be out of town all day so this dinner is going to be super quick as it will be late when I return)
- WEDNESDAY: Vegan "beef" burgers with lettuce, tomato, pickles (Claire's coming for dinner!) and beef burger for Dave; Homemade Potato Salad; Steamed Broccoli
- THURSDAY: Two Season Squash Medley; Grilled BBQ Chicken; Garlic Toast
- FRIDAY: Fish and chips (the fish is Haddock fillets) and the "chips" are homemade French Fries with garlic and parmesan; fruit salad with Watermelon, Raspberries, blueberries. Ice Cream sundaes for dessert with Oat Milk Coffee Ice Cream, hot fudge, Low Fat Cool Whip, Walnuts, Raspberries
- SATURDAY: I'm going to ask my husband to make his famous Rice and Beans or if I don't hike all day and come home in time, I will make my Stuffed Peppers and have fresh corn on the cob.
