I haven't planned a weekly menu in a few weeks so thought I'd get back to it, since I need to head over to the grocery store later this morning. I find that it helps us with our grocery budget and lets me see when I want to go over to the farm stands or up to my fave farmers market for fresh produce. Honestly, the produce in the local grocery chains just aren't that great this year. Now that I'm retired, I have more time to check out other places! Last night, we had Stuffed Pepper Soup and Garlic Breadsticks and I had so much leftover that our youngest daughter popped in after work and grabbed some for her late dinner. (sometimes she has to be at the eye place on the weekends and doesn't get out of work until 6:30 pm). In fact, we have so much leftover that it will be our lunch today or tomorrow.
- MONDAY: Roasted Chicken from the deli; Garlic and Dill Mashed Potatoes; Green Bean Salad
- TUESDAY: Fish Tacos, Salsa, Corn Chips; Coleslaw
- WEDNESDAY: Loaded Baked Potato Casserole; Steamed Beets
- THURSDAY: Italian "Rounds"; Cheesey Orzo; Tossed Salad
- FRIDAY: Crunchy Tuna Wraps; Leftover Salsa, Corn Chips; Apple Pie for dessert
- SATURDAY: Grilled Salmon; Tossed Salad; Garlic Rolls

My husband loves apple pie but I like the one I make the best. I use McIntosh apples which are a little bit sour. I prefer apple crisp. I have been eating abut 90% plant based for the last year or so. I do love to grill a big marinated portebello mushroom. So yummy.
