Dave is back from Guatemala and I've been menu planning for some healthy protein packed meals for him since most of their food consisted of rice and beans and fresh fruit.

- MONDAY: Baked pork chop for Dave; Sauteed Garlic Veggie Scramble (sweet potatoes, zucchini, summer squash, carrots, green and yellow peppers, onions) and Orange Tofu for me.
- TUESDAY: Beyond Beef (vegan) Burgers with lettuce, tomato, avocado and 3 bean salad
- WEDNESDAY: Baked or Grilled Blackened Salmon, Garlic Bread, Tossed Salad
- THURSDAY: Chicken Stir Fry with Carrots, Red and Sweet potatoes, Broccoli, Water Chestnuts, Peas, Green beans.
- FRIDAY: Tuna Melts; Asian Salad
- SATURDAY: Slow Cooker Sloppy Joes with Crave ground "beef" (vegan) and Steamed Broccoli (no bun....putting over Texas toast).
Not sure about Sunday.....am hoping to have friends over......

Hi Faith. Everything sounds so good. I should make sloppy joes again soon. We enjoy them. We are using Beyond/Impossible Beef a lot more now in cooking. Have a good week. See you again soon.
