Do you like Mexican food but want less "fast food" style and more "homemade" style, like me?
Well, here's a recipe for you that I "tweaked" a bit from the Taste of Home version.
I begin with buying a high quality beef chunks. I typically try to get bison meat as it's much better and less fatty. If bison meat isn't on sale, then I opt for hormone-free, antibiotic-free beef. Again, a little more pricey but well worth it. Here's what you do:
FIESTA BEEF BOWLS
1-2 lbs of beef chunks/cubes
1 1/2c. water
(if only using 1 lb of beef, only use 1 c. of water)
1 envelope of Burrito seasoning mix
1/4 c. salsa
1 can sweet corn, drained
Instant rice, cooked
( I make 2 cups for a family of 4)
1/2 c. chopped red and green peppers per person
1 can white northern OR black beans, drained and rinsed
1/2 c. shredded cheddar cheese per person
1/2 c. sliced black olives
(each person takes a little, if any...in my house, that's just the adults!)

1 c. per person of crushed tortilla chips
1/4 c. salsa per person
- Place beef, water and Burrito seasoning mix into a slow cooker.
- Mix the water and Burrito mix well, stirring over the beef.
- Pour the 1/4 c. salsa over the top of beef and cook on low heat for 6-8 hours.
- About 1 hour before serving, add the corn and beans to the slow cooker and cook the instant rice. Keep the rice warm by keeping covered in pan until time to serve.
- Place crushed tortilla chips in each person's bowl.
- Spoon rice onto top of chips.
- Add the beef mixture and top with the chopped peppers.
- Add shredded cheese, olives (optional) and salsa.
ENJOY!!!!
Dinner ideas: serve Fiesta Beef Bowls with a side fruit salad or slices of mango, papaya or cantaloupe. This makes a complete, nutritious meal and I haven't yet met a child or teen who doesn't like this recipe! It also does well as leftovers the next day for lunch :)

Sounds yummy. Except I have a rice fan in the house so I'd probably have to double that rice! LOL.
I actually doubled the rice this time too Susanne!! (for claire...she LOVES the rice and not so much the chips..she likes the tortilla chips on the side.) this is one of our most favorite fall meals though...quick and easy with the slow cooker...perfect for the evenings she has to be at the dance studio by 6.
