A Christmas Classic

At our house, we love the Christmas classics.

The stories, the Scriptures, the songs.

The movies.

And the food.

Included in our favorite Christmas foods is my mother's recipe for Peanut Butter Balls.

She made these every year from the time Dave and I got married.  Once our oldest daughter was old enough to eat them (at around age 3), she discovered that she loved them, too.  I find them a little too rich for me now that I'm older. One time when our youngest was about 3 and our oldest was 8, the youngest hid them from daddy cause he kept getting into them!

Because this is our 2nd year without mom here on earth to make them, I thought I would try them once our oldest gets home from college in a couple of weeks.  I also wanted to share the recipe with you.


PEANUT BUTTER BALLS

1 1/2 c. peanut butter
1/2 c. margarine
1 tsp vanilla extract
1 lb box of confectionery sugar
  • Mix all of the above ingredients. 
  • Form into balls, and place on waxed paper.
  • In a double boiler or microwave, melt 1 pkg of chocolate chips (we use semi-sweet) and 4 Tbl of Crisco shortening.
  • Stir frequently.  I microwave for a minute and stir and repeat for about 3 minutes.
  • Keep the chocolate warm and dip balls in with a toothpick.
  • Push the ball off onto the waxed paper with another toothpick.
  • Freeze on the waxed paper until they are hard.  I transfer the balls into a waxed paper lined container to freeze.
TIPS:  these make great additions to cookie platters or to give as gifts.  Simply line a Christmas tin or box with waxed paper and place balls inside.  Tie a Christmas ribbon around the tin or box and you have a yummy treat for a special friend or relative.  

Gift ideas:  add to a mason jar with pretty ribbon wrapped around and tuck into a wooden or wicker basket with pretty Christmas cloth napkins and some Christmas tea or French Roast Coffee.

Add balls to little goody bags and place in your child's stocking.

Add balls to a cookie swap platter of cookies.  Include the recipe!

These are my favorites! But i have never attempted them. Maybe I will do some baking this weekend and try these too! Thanks for the oh so easy sounding recipe! (I'll let you know how mine turn out ! LOL)

Thanks for posting. Somehow I never got this recipe. I guess I just always depended on Mom making them.
