It's almost the end of January...can you believe it?
That means we are in Mid-Winter!! Yeah!! We have had 5 weeks of winter even though I do know it has felt like it's been longer....but...we had a lot of snow melt and temps have been going up, then down, then up....so typical here in the Northeast, especially Eastern NYS.
While I wait for Spring, I have set a goal of trying new things this winter....some of them have made my Faves list this week. How about joining in with those of us who participate in the weekly FAVE FIVE and link up at Susanne's site where you can learn more about this gratitude meme.

- NEW LUNCH! Claire had to return to her dorm Sunday morning, after 5 weeks at home for Christmas/Winter break. NH still has a lot of snow but the day was sunny and warmer and so after getting her things into her room, we walked over to Main Street and ate lunch at this place. She talked me into getting the Acai bowl (minus pb for me) and wow......I loved it! It was delicious, icy cold, and the coconut and cacao nibs were a decadent addition. I plan on making this dish tomorrow substituting mango and berries for acai as my local store didn't have any in stock. It's such a delicious vegan option and really filled me up for the 4 hour car ride home. I'm thankful we had a fun lunch with Claire and that we also had safe travels to and from NH.

- NEW ROUTE: Sunday morning we left Dave's parents on the south shore of Massachusetts where we had had dinner and spent the night, and traveled north to NH to get Claire back to college. Since it was Sunday morning, we decided to just drive right through Boston (the most direct route from his folks in Pymouth County) and take 95 all the way to Durham. I loved it! (usually we take 495 of course as we come from NYS via Interstate 90) I've NEVER been a fan of the "big dig" (the tunnel) through the city but on a Sunday there was hardly any traffic. It was a pleasant route and of course I just loved being on the north shore again.....and the scent of the ocean coming through the car windows was just heavenly. I'm thankful that it only took a little over an hour and that we had safe travels. (the photo is one of our fave scenes in Boston)

- NEW GROUP: Tuesday evening the small group I lead started up again. This semester there are 8 of us and 4 are new! One is my neighbor (she was in the group about 7 years ago when I first started one) and 2 are women whom I've known a very long time from a previous church, and 1 is new to the capital region area. We all instantly bonded and the discussion for chapter 1 was edifying for all of us. I'm so thankful I get to do life with these ladies and I'm really looking forward to all of us digging deeper into the Word, the Lord, and with each other.
- NEW DINNER RECIPE! I don't think I've shared this recipe on my blog yet so I will make sure I do.......it's a sweet potato rice bowl and oh my goodness it is delish! It's totally vegan but you can add grilled chicken or shrimp if you are so inclined. There are many variations of this recipe you can do. One of my fave ways to make it is shown here with the sauteed sweet potatoes, zucchini, onions and black beans. It only takes about 10 min for the veggies to get tender and then you add a dollap of salsa, heat it through and pour it over jasmine rice or a mix of rice and quinoa. I add the blue tortilla chips to scoop with (although I always end up using a fork, too). And this past week pomegranate arils were on sale so I bought a package and we had a cup of those with our dinner.....superfoods and vegan!! I'm thankful I discovered an easy vegan recipe that's quick and easy to prep!

That scene through Boston looks very familiar to me! Your lunch looks delicious. I do an almond creamer also but the one I use has no added sugar. It's called Califia farms and it also has no carrageenan.
You make your recipes sound delicious but I'm afraid I'd find it hard to be vegetarian let alone vegan although we are trying to eat more healthily. Glad you had a good journey through Boston. I remember the trips taking our kids backwards and forwards to uni. I'm glad those days are over. Enjoy your weekend.
Glad you found some new recipes and dishes that work for you! The drive through Boston sounds pleasant with the traffic being less than usual. I love the smell of ocean breezes. The small group sounds like it's off to a great start.
My favorite part of this post is when you describe the scent of the ocean. Oh, it has been too long since I've had an 'ocean fix.' At least a year!
The almond milk I purchase from Trader Joe's doesn't have carrageenan in it. That acai bowl looks yummy! I'll go check out the ingredients on the menu.
My parents lived in Boston for a year--about 40 years ago! I visited a couple of times... the best part of any trip, in my opinion, is the scent of the sea!
