SPECIAL SLOW COOKED PASTA SAUCE


I've been asked many times  for this recipe, by various people we've had over for dinner or who hear about my special slow cooker pasta sauce.  I thought I would finally get it posted to the blog!

Note: you will need to do about 20 min worth of prep/cook time in morning BEFORE putting everything into the slow cooker.

FAITH's SPECIAL SLOW COOKER SAUCE

2 lbs of ground meat
 (I use ground bison and ground "Beyond Beef")
1 c. chopped onion
1/2 c. chopped green pepper (or 1 small one)
1/2 c. chopped yellow pepper
2 jars of pasta sauce (traditional)
I like Valente brand..it's local)
if you don't have a GOOD homemade tasting pasta sauce, use 2 cans of regular tomato sauce
1 small can of tomato paste (6 oz)
1 c. grated parmesan cheese
1/2 c. dry red wine OR beef broth
1/4 c. dried parsley flakes
2 TBL dried oregano 
2 tsp Italian seasoning
2 tsp minced garlic
dash of ground black pepper

  • In a large skillet, cook the bison and beyond beef until no longer pink.  There is no need to drain as these meats do not have fat, therefore no grease....once the bison is just getting browned, add in the peppers, onion.  Cook over medium heat for about 5 minutes or until all meat is browned.
  • Transfer to a slow cooker.
  • Stir in the sauce, paste, cheese, wine or broth and all the seasoning.
  • Stir well.
  • Cover and cook on low for 6-7 hours.  Cook on simmer (if simmer is an option) for the last 2 hours.
  • Serve over cooked pasta of your choice. We like bow ties.
MENU IDEAS

Special Slow Cooker Sauce over cooked pasta with tossed salad and garlic bread.  Sometimes in place of salad, I steam fresh or frozen broccoli.

Another Dinner I've created:  this slow cooker sauce over baked Texas Toast or over slices of Garlic bread.  Salad on the side. 

ENJOY!!

This recipe serves 6-8 people and usually there are leftovers.
